If they are set up correct with a decent carb (Dellorto seems the favourite) then they should start hot, or cold, first or second kick - mine does. Just slapping a new carb on wont necessarily be that good a result, these things need setting up properly, preferably on a rolling road. Persevere and you'll have a great bike!

Seat of your pants and trial and error works better.
I've seen bikes set up on a rolling road not able to make the journey home as they're unrideable.
Maybe I've just got a magic arse.

you could always fit an air fuel ratio meter and do the seat of the pants dyno at the same time,
