I once read that the Rotax 348/504/604 engine had been used in other applications than motorcycles. Does anybody know if there is any truth to that and if so, in what were they fitted.

I fitted one in a shed once
Pretty sure the ones In snowmobiles are twins and triples similar to their aircraft engines.
Also pretty sure all but the oldest have constant velocity type transmissions so their would be no need for most of the crankcase (where the gearbox is in the bike engine)

Since they started ( originally in Germany), Rotax have made over 50 engine types in different categories, the sizes you mention are in the Motorcycle category only.
